Cook the brown rice noodles until al dente. Look for noodles made from only brown rice flour and salt.

Coconut aminos is the soy-free and gluten-free version of soy sauce.

Rice vinegar and toasted sesame oil add flavor.

Honey adds a natural sweetness. If desired, replace with maple syrup for a vegan version.

Freshly squeezed lime juice adds a touch of tartness.

Minced garlic adds a delicious garlicky flavor.

In addition, grated ginger adds freshness and flavor. If needed, use ground ginger.

Red pepper flakes add spice and heat. This ingredient is optional.

Thin out the sauce with warm water. Use more to make a thinner sauce.

Step 1

First, cook the brown rice noodles according to the package instructions until al dente. Drain and rinse them under cold water to stop the cooking process. Set them aside.

In a medium-sized bowl, whisk together the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, honey, lime juice, minced garlic, grated ginger, and red pepper flakes (if using).

Gradually add warm water to the sauce, whisking continuously, until you achieve a smooth and creamy consistency. Set the sauce aside.

In a large mixing bowl, combine the cooked rice noodles with the peanut sauce. Toss and stir gently until the noodles are well coated with the sauce.

  • ½ cup creamy unsalted peanut butter
  • 3 tablespoon coconut aminos
  • 2 tablespoon rice vinegar
  • 2 tablespoon toasted sesame oil

  • 1 tablespoon freshly squeezed lime juice
  • 2 cloves garlic (minced)
  • 1 teaspoon grated ginger
  • ¼ teaspoon red pepper flakes (optional, for added heat)
  • ¼ cup warm water (more as needed)

    I doubles this recipe because my family likes their noodles! But it ended up being way too saucey. I should've added the sauce more slowly rather than add the noodles to the bowl the sauce was in. I will get more rice noodles and add them to the left overs to fix the ratio. The flavoring was good!
