Cook the sweet potatoes before making this recipe. Roast, microwave, or boil them. If you boil the potatoes, squeeze out all excess water.

    My family LOVES this recipe! I swap in unsweetened cashew butter and use purple sweet potatoes (blend in better color-wise - nobody knows!). I also add 3/4t baking soda and a pinch of salt so they have more rise. And I bake them in a 9x6 pan, which takes about 30 minutes. So delicious! Thank you for this recipe - it is a keeper!!

    If you are a "clean eater," these are great. They definitely satisfy my sweet tooth, and I feel way better about eating one than a box brownie. My 14-year-old son, however, tried one and said, "Mom, no way. Please just make regular brownies." Again, I thought they were good! But not a hit with my kids.
