Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    This part of the summer is all about freezing garden goodness for the winter. Those babies would get put to work (hopefully all three at once) slicing peaches, chopping peppers, and tearing through greens to enjoy the rest of the year!

    I would use the knives to slice fruits and vegetables- mainly tomatoes. I dislike using old knives that i can not cut through a tomatoes.

    I've never had a knife set. My sister n law came over one day and she was in the kitchen with me and was helping cut some vegetables and literally made fun of me cause of my knives. I love to cook and always use lots of onions carrots and garlic but it just such a shore with my cheap knives. I just never know what to look for and I was checking them out at Walmart and I didn't like them.

    These knives would be used for everything! Our CSA has been plentiful this year, so lots of veggies to chop. We cook almost all our meals from scratch, even baby food. My father, who is a professional chef, has a couple of these Japanese knives & they are awesome.
