Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I love trying new recipes and have been using many from both 1oo days cookbooks and also some of the partnering friends. We eat a lot of salads and throw a variety of chopped or diced vegetables into many different dishes. The knives would be a big help in all the prep work!

    So may possibilities! First, I would use the vegetable knife to cut thick slices of tomato and chiffonade some basil for a family favorite - amazing tomato sandwiches! I would routinely use the vegetable knife to prep snacks for the week - slice carrot sticks and cucumber rounds, remove strings from snap peas, quarter radishes. I would use the slicing knife to cut thick chunks of chicken breast for the weekly salad recipe and I would use the utility knife to peel small fruits for pie :)

    I would absolutely love these knives to help chop, dice, slice & sliver all the veggies from the farmers market this summer. I find it very therapeutic versus using other methods, such as a food processor or chopper.

      Truthfully, without sounding like a complainer, I have knives that are over 25+ years old...and they weren't that great then. I would love a new set to cut all my veggies for salads and recipes that call for dice and chop...because they don't come out looking so pretty with a dull knife! :)
