Ingredients & Substitutes

These are the ingredients for gluten-free gravy. Scroll down to the bottom for the full recipe.

Butter helps create the roux. We recommend using unsalted butter.

Tapioca flour helps thicken the gravy. This is the corn-free version of cornstarch. Use arrowroot powder or whole grain gluten-free flour if needed.

Any type of broth works well. We have tried this with chicken broth, beef broth, and vegetable broth. Or, use pan drippings. To do this, save the leftover pan juice from roasted chicken, turkey, roast beef, or pot roast.

Add in sea salt and pepper to taste.

Garlic powder adds a delicious garlicky flavor.

Coconut aminos is the soy-free and gluten-free version of soy sauce. This adds a deeper flavor to the gravy.

Lastly, garnish the gluten-free gravy with fresh thyme.

This gluten-free gravy has a rich and flavorful taste that is similar to traditional gravy.

The gravy has a smooth and creamy texture that is perfect for spooning over mashed potatoes, turkey, or chicken.

This gravy can be as smooth or as thick as you want. Continue cooking for a thicker sauce.

How to Make

Step 1

First, melt the butter in a large skillet over medium heat.  Once melted, add in the tapioca flour.  Use a whisk to stir continuously for about 3 minutes.

Step 2

Then, pour in the broth (or pan drippings).  Bring to a low boil.  Lightly boil for 1 minute, or until gravy has reached desired thickness.  Whisk consistently to prevent burning.

Remove the pan from the heat.  Stir in the seasonings and coconut aminos.

Finally, serve.  Add fresh thyme if desired.

Pan Drippings

Pan drippings are the flavorful juices and fat that accumulate at the bottom of a roasting pan when you cook meat, such as turkey, chicken, beef, or pork, in the oven. These drippings contain the meat's flavor and can be used as a base for making gravy. Here is how to use pan drippings for gravy:

  1. Collect the Drippings: After you've finished roasting your meat, remove it from the pan and transfer it to a serving platter. Place the roasting pan on the stovetop or a heat-resistant surface. You can use a turkey baster, a spoon, or a fat separator to collect the drippings from the bottom of the pan.
  2. Separate the Fat: If there's a significant amount of fat in the drippings, you'll want to separate it from the juices. You can use a fat separator, which allows you to pour off the fat while leaving the flavorful juices behind. Alternatively, you can skim off the fat using a spoon or ladle.
  3. Make a Roux (Optional): If you want a thicker gravy, you can make a roux by heating some fat (butter or oil) in a separate saucepan and adding an equal amount of flour. Cook the mixture over medium heat until it turns a light golden brown. This helps to thicken the gravy.
