With the 4th of July just around the corner, I've got a brand new recipe for you that would be the perfect addition to your holiday barbecue!

Coleslaw is obviously a staple this time of year, but how about switching it up with a Green Apple Cucumber version instead of typical cabbage? Even with the little bit of vinegar in this one, my kids were all over this dish. So it'll definitely be a crowd pleaser.

Green Apple Cucumber Slaw

This Green Apple Cucumber Slaw would be the perfect addition to your summer barbecue. My kids were all over it, so it will definitely be a crowd pleaser. The combination of green apples and cucumbers in a creamy sauce works well as a side dish at your cookouts.

Ingredients
  

  • 1 cucumber (halved and cut into thin slices)
  • 2 Granny Smith apples (cut into thin slices)
  • 2 green onions (white and green parts)
  • ¼ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • salt (to taste)
  • pepper (to taste)

Instructions
 

  • Add the cucumber, apple, and green onion to a large bowl. (For the apple I used an apple corer/slicer and then sliced each piece two more times.)
  • In a small bowl, whisk together the sour cream, vinegar, honey, salt, and pepper. Pour over top of the apple mixture and toss together until well combined. 
  • Serve or store in the refrigerator for up to two days.

    Is there something you would suggest to substitute for sour cream? My husband does not like it, and can taste it anytime I try to sneak it into a recipe?

    I made this for a 4th picnic last weekend, after I came across it looking for something to make that wasn't a pasta/potato salad. Even though these ingredients don't typically go together, they are all things I like so I gave it a try. Well it was a HUGE hit! I shared the recipe with at least 10 people that day, and was even asked to make it for another picnic! When I was at the store getting the ingredients the second time, the check out lady asked what I was making, and when I told her, I had to give her the recipe too lol! Home run!

    I substituted Greek yogurt for the sour cream, excellent. The perfect combination of crunchy & tart, travels well so it's perfect for potlucks & picnics.
