With the 4th of July just around the corner, I’ve got a brand new recipe for you that would be the perfect addition to your holiday barbecue!

Coleslaw is obviously a staple this time of year, but how about switching it up with a Green Apple Cucumber version instead of typical cabbage? Even with the little bit of vinegar in this one, my kids were all over this dish. So it’ll definitely be a crowd pleaser.

  1. Is there something you would suggest to substitute for sour cream? My husband does not like it, and can taste it anytime I try to sneak it into a recipe?

    I made this for a 4th picnic last weekend, after I came across it looking for something to make that wasn’t a pasta/potato salad. Even though these ingredients don’t typically go together, they are all things I like so I gave it a try. Well it was a HUGE hit! I shared the recipe with at least 10 people that day, and was even asked to make it for another picnic! When I was at the store getting the ingredients the second time, the check out lady asked what I was making, and when I told her, I had to give her the recipe too lol! Home run!

  3. I substituted Greek yogurt for the sour cream, excellent. The perfect combination of crunchy & tart, travels well so it’s perfect for potlucks & picnics.

  4. Sounds delicious and a nice change from a heavy and cabbage-y coleslaw. It will be on my party table this weekend!
