5 Minute Fudge Brownies (with sugar)!

52 Reviews / 4.9 Average
These 5 Minute Fudge Brownies only take five minutes to mix the batter that is so much better than the store-bought boxed one. While it does contain sugar, I always say it's ok to indulge a little bit every now and then, and these are totally worth it.

Okay, just to be clear upfront - it takes only 5 minutes to stir up the batter for these homemade fudge brownies, but of course a little longer than that to actually bake them! Enjoy a whole wheat brownie that makes for a nice alternative to boxed brownie mix.

5 Minute Homemade Whole-Wheat Flour Brownies

But as I was making this batch I was thinking how it really doesn't take much longer to make brownies from scratch than it does to add some eggs and other stuff to one of these lovely boxes of brownie mix pictured down below.

So while homemade Fudge Brownies (with sugar) don't quite fit our definition of real food, I think we can all agree they're WAAAAY better than this highly processed factory-made stuff that's full of partially hydrogenated oil (i.e. trans fat), refined flour, high fructose corn syrup, artificial flavors and a bunch of other additives I can barely pronounce and therefore would most definitely not cook with at home. And we all know most people like to have a good ol' fudge brownie on occasion. For a healthy idea, make these Avocado Brownies or these Gluten-Free Brownies!

My Go-To Chocolate Chips: Enjoy Life Chocolate Chips

Whether it's brownies you're after or just a handful of chocolate chips, I love using the brand Enjoy Life Foods. Their company has managed to make chocolate chips (and morsels, minis, and chunks!) solely using the ingredients that are meant to be in chocolate: Sugar (Cane Juice), Natural Chocolate Liquor, and Non-Dairy Cocoa Butter.

This is unfortunately no small feat in our industrial society - when you look at the back of most other chocolate chip packages you'll find ingredients that do not belong (such as Soy Lecithin and Artificial Flavoring)! Since Enjoy Life's chocolate chips are so pure, they are also incredibly allergy friendly including: Gluten Free, Wheat Free, Dairy Free, Peanut Free, Tree Nut Free, Egg Free, Soy Free, Fish Free, and Shellfish Free.

I love that and knew you would, too. :)

Ingredients

  • ¾ cup sugar
  • ½ cup whole-wheat flour (I used white whole-wheat flour)
  • ¼ cup unsweetened cocoa powder (I highly prefer the "super dark" variety)
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup butter (melted, plus a little extra for greasing)
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup chocolate chips ((I used Enjoy Life mini chips, see note above))

Instructions

  • Preheat the oven to 350 degrees F. Generously grease a 8X8 or 9X9 square baking dish with a little melted butter (a pastry brush makes this job super easy).
  • In a large mixing bowl whisk together the sugar, flour, cocoa powder, salt, and baking powder. Make a well (hole) in the center and drop in the butter, eggs, and vanilla extract. Mix together thoroughly and then fold in the chocolate chips with a rubber spatula. (See I told you this would be quick and easy!)
  • Add the brownie batter to the baking dish and use the spatula to flatten out the top into one even layer. Bake for about 30 minutes and let cool before slicing into squares (if you can control yourself enough to wait - ha)! Enjoy.

We love Enjoy Life products because of a soy allergy! We find them at the local grocery stores in the health food or organic food section. They also make a lot of other stuff that, while not necessarily real food, is better than most things and can go to schools that need something with a shelf life.

Saw this recipe today and made them tonight. My peanut gallery all gave two yummy thumbs up!! I did modify the recipe by taking out butter and used coconut oil, instead. They were SUPER easy and do taste delicious!!! Thank you! This will be a great recipe for my kids to learn to bake on their own.

Eating these now. Made a few changes. My wheat flour was not bleached. I didn't use any chocolate chips. I cooked them in my iron skillet for a little less than 20 mins. They turned out perfect and tasty. I bet they would have been even better with the morsels of chocolate chips.

White wheat flour is not bleached - there is red wheat, and white wheat (you can see the color difference in the wheat berries) and white wheat flour simply refers to flour that is ground from white wheat.

    • Sarah says

      May 30, 2014 at 12:10 pm

No, it's not bleached, it's just the type of wheat they start from. The bran layer of white wheat kernels is noticeably lighter than normal "red" wheat kernels. Using the whole white kernel yields a whole wheat flour that is milder in flavor. You can easily use red wheat, or just labeled as whole wheat flour here, the flavor will be just a little more wheaty.

Can't wait to try these as a summer time treat! Will go so well with homemade vanilla ice cream!! I really want to buy Enjoy Life chips but I really wish they made chocolate chips the exact size/type as toll house! All I see are mini's, dark, and chocolate chunk. My family is particular about their chocolate chips and in order for me to make the switch it better be identical! Ha! Now, for melting and baking purposes it wouldn't matter on shape and size but I would rather make 1 purchase and be done with it. ;)

I have a cake recipe without eggs. Wacky cake:

3 cups flour (works best with white, my spelt attempt didn't work well)
2 cups sugar (this is the recipe but I only put in 1 1/2)
      6 T cocoa
      2 tsp baking soda
      1 tsp salt
      2 tsp vanilla
      2 T vinegar
2/3 cup oil (I've used olive or sunflower)
      2 cups of water

Just mix all the dry ingredients and then make little holes to add the wet stuff and then mix them all together in a 9x13 pan. No bowl needed if you mix carefully. 350 deg for 30-40 min.

For optimal baking results, one should never stir anything into cold eggs, regardless of coconut oil. On days when I forget/don't have time to take eggs out ahead of time to warm up, I use this helpful Martha Stewart trick, I simply put the eggs In a bowl of hot water for 10 minutes, problem solved.

Your recipe looks similar to mine, except my recipe calls for blooming the cocoa in boiling water to intensify the chocolate flavor, Yum. I agree, homemade is always better then a box!
