Pineapple Mojito Smoothie (+Book Review)

I'm so excited to tell you all about my friends Jadah and Jen's brand new Simple Green Smoothies book! First of all, my whole family loves smoothies - they are our green drink of choice. As I've shared before we love them because they are the whole fruit and vegetable (unlike juicing), which means they are filling enough to be part of a meal or even as a snack. Plus smoothies are a fabulous way to get your kids in the kitchen. Little ones love to help put the ingredients in the blender (which let's face it - couldn't be easier) and push the buttons of course!

So back to this fun cookbook I was telling you about. We first met Jadah and Jen at a blogging conference in Austin a few years ago. And let me tell you what these girls are super duper nice - and FULL of energy. Must be all those green smoothies! So as you can imagine it has been great fun watching their blog continue to grow over the years and now watch them realize their dream of becoming published authors. And here it is - it's a beauty!

They of course sent me this copy for free (because that's what friends do!), but I would have totally bought one anyway. It's full of so many fun ideas. Here's one that caught my eye right away - smoothie bowls. What a great way to switch things up, right?!

And I know so many will just love this section - their 10-Day Kick Start Program. The whole purpose of this section is to get you in the habit of adding one green smoothie to your daily routine. They are not asking you to change anything else (especially if you are brand new to this lifestyle) because they like to keep things simple and don't want you to get overwhelmed. I must agree - for some people it's baby steps or nothing. Trust me, anyone can do this one!

I'm super excited to have so many new colorful and tasty looking recipes to flip through with my kids at my kitchen table. We're guilty of getting in smoothie recipe ruts over here, and truth be told one of our all time favorite smoothie recipes is in fact from Simple Green Smoothies - their Beginner's Luck recipe. I seriously make this one all the time so you can imagine my excitement when I saw the page in their new book that shows me how to tweak that recipe seven different ways - yay!

Another recipe in their new book I immediately couldn't wait to try is the Pineapple Mojito Smoothie. I was first turned on to using coconut water in smoothies when we took their 30-day challenge earlier this year - it is so good blended in even if you don't care for it plain!

So I made it for my girls for their afternoon snack today; they gobbled it up and the rest is history. Here it is below so you can try it at home. But don't stop there ...go get yourself a copy of this book (that's available on Amazon right now for a pretty good price if I do say so myself!). It would also make a great gift in my opinion.

Pineapple Mojito Smoothie

Ingredients
  

  • 2 cups kale (stems removed (I used spinach because that is what I had on hand))
  • ¼ cup mint (fresh)
  • 2 cups coconut water (unsweetened)
  • 3 cups pineapple (chopped)
  • 1 lime (juiced)

Instructions
 

  • Blend the kale, mint, and coconut water until smooth.
  • Add the pineapple and lime juice and blend again.
