How to Make

Step 1

First, line an 8 inch by 8 inch square pan with parchment paper.

Step 2

In a food processor, add all of the crust ingredients. Process until a sticky and crumbly mixture is formed.

Press this mixture down into the prepared pan.

Next, add all of the filling ingredients to a blender. Blend until completely creamy, about 30 to 60 seconds.

Pour this creamy mixture on top of the crust.

Place the pan in the freezer. Freeze for 2 to 3 hours, or until the bars are completely set and no longer gooey.

Step 7

Finally, remove the vegan cheesecake bars from the freezer. Garnish with a little extra coconut on top if desired. Slice into bars!

Crust

Notes

  • The crust mixture should stick between your two fingers when pressed together.
  • The cheesecake filling should be silky smooth.  Use a high powered blender and continue blending until creamy.
  • Freeze until the cheesecake filling is fully set.
