Marinated Pork & Pineapple Kabobs

I recently discovered that pineapple is an amazing tenderizer for meat! After briefly marinating these kabobs in a mixture of pureed fresh pineapple and some other yummy stuff, the pork was almost falling apart it was so tender. I can't wait to try it on some other cuts of meat after how well these marinated pork kabobs turned out! So tasty. :)

What Cut is Best for Marinated Pork Kabobs?

The best meat choice for this recipe is going to be a tenderloin. You want a cut of meat that won't dry out while on the grill.

Can I Cook Kabobs in the Oven?

Yes! If you don't have a grill, you can still make delicious marinated pork kabobs (or any type!). Just preheat the oven to 375 degrees F. Then cook them for about 20-30 minutes, turning occasionally.

Side Dishes That Pair Well Marinated Pork Kabobs

This particular recipe is full of flavor from the pineapple, so you'll want to keep your side dish pretty simple. I would pair it with a simple salad with some grated Parmesan cheese on top, a baked sweet potato, or fresh fruit. Some other options would be this Pasta Salad with Red Pepper Pesto or even Southern Potato Salad (without the mayo).

Ingredients
  

For the Marinade

  • 1 cup chopped pineapple chunks
  • 4 tablespoons olive oil
  • 2 cloves garlic (minced)
  • ½ jalapeno (minced)
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt

For the Kabobs

  • 1 ½ pounds pork tenderloin (cut into 1" to 1 ½" chunks)
  • ½ fresh pineapple (cut into 1" to 1 ½" chunks (eat or save the rest after cutting some up for the marinade!))

Instructions
 

For the Marinade

  • Puree the cup of pineapple chunks (remember to save half of the pineapple for the kabobs), olive oil, garlic, jalapeno, cumin, oregano, and salt in a food processor until smooth. Set aside.

For the Kabobs

  • Place the pork and pineapple chunks in a large zip lock bag. Pour in the marinade and rub it around to coat. Refrigerate for a few hours. Pineapple tenderizes the meat quickly so that's all it needs!
  • Preheat a gas grill to medium-high heat, around 425° F (or prepare a charcoal fire).
  • Thread the pork and pineapple chunks onto skewers in alternating order. Place the kabobs on the grill and cook for 5 to 6 minutes per side, until the pork is done all the way through (no longer pink in the middle). Do not overcook.
