Ingredients & Substitutes

These are the ingredients and substitutes for this lemon blueberry bread. Scroll down to the recipe card below for the entire recipe.

For the best flavor, use fresh lemon zest and fresh lemon juice.

We limit our sugar intake, but this bread uses a little granulated sugar.

For this recipe, use white whole wheat flour. If you are gluten free, gluten free flour also works well.

Baking soda helps leaven this bread.

A little sea salt helps to balance the tartness and sweetness.

Use unsalted butter. It should be slightly soft to the touch, but not melted.

Three eggs help bind the bread batter together.

Use any type of milk to help thin out the batter.

Use fresh blueberries. Do not use frozen berries. Frozen blueberries will thaw and become very juicy and watery.

For the frosting, we mixed our homemade vanilla frosting with our homemade blueberry jam. Stir until creamy.

How to Make

Step 1

First, preheat the oven to 350 degrees Fahrenheit. Line an 8 inch by 4 inch bread loaf pan with parchment paper.

Step 2

In a large bowl, combine the lemon zest, sugar, white whole wheat flour, baking soda, and sea salt. Stir until combined.

Using a hand mixer, add in the softened butter. Mix until crumbly and until no large clumps of butter remain.

Then, add in the eggs, fresh lemon juice, and milk. Stir together.

Toss the blueberries in 1 tablespoon of white whole wheat flour. Then, carefully fold them into the batter.

Transfer the bread batter into the lined pan. Smooth into an even layer.

Bake for 55 to 60 minutes or until a toothpick inserted comes out clean. Allow the bread to fully cool before making the homemade frosting.

Finally, once the lemon blueberry bread has cooled, make the vanilla frosting. Combine the vanilla frosting and jam in a small bowl. Frost, slice, and serve!
