What is Paleo?

The Paleo diet, short for Paleolithic diet, draws inspiration from the eating habits of our hunter-gatherer ancestors.

The core idea is to consume foods that would have been available to humans during the Paleolithic era, which includes meat, fish, vegetables, fruits, nuts, and seeds.

This diet avoids grains, legumes, dairy, processed foods, and refined sugars.

The Paleo diet promotes natural, nutrient-dense foods that provide optimal nourishment and have shown promising health benefits.

Almond flour is made from ground-up blanched almonds. This healthy grain-free flour adds a hearty and nutty flavor.

Coconut flour is another popular Paleo baking flour. Coconut flour is highly absorbent and adds a slight sweetness.

Ground flaxseed adds a nutty flavor.

Arrowroot flour helps give the bread its elasticity. If needed, replace with tapioca flour.

Baking soda helps this healthy bread rise in the oven.

Add in a pinch of sea salt.

Four large eggs help bind the bread together. In addition, it provides a light and airy texture. Do not use an egg replacement or vegan eggs.

Melted coconut oil acts as the baking fat. Unrefined coconut oil has a slight coconut flavor. Use refined coconut oil for a neutral flavor. If needed, use melted butter.

Apple cider vinegar provides a slightly tangy flavor.

Add in a tablespoon of honey for added sweetness. Or, use pure maple syrup.

Lastly, use unsweetened dairy-free milk. Almond milk, cashew milk, coconut milk, and macadamia nut milk work well. For nut-free, use coconut milk.

One of the most surprising things about this Paleo Bread is its taste and texture! Unlike other gluten-free bread alternatives that may be dense and crumbly, this recipe produces bread that is soft, moist, and slightly nutty in flavor.

The combination of almond flour, coconut flour, and arrowroot flour creates a well-balanced, chewy consistency that perfectly complements your favorite spreads or sandwich fillings.

How to Make

Step 1

First, preheat your oven to 350 degrees Fahrenheit. Line an 8-inch by 4-inch loaf pan with parchment paper.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, ground flaxseed, arrowroot flour, baking soda, and sea salt.

In a separate bowl, whisk together the eggs, melted coconut oil, apple cider vinegar, and honey.

Step 4

Gradually add the wet ingredients to the dry ingredients. Mix until well combined.

Stir in the dairy-free milk to create a smooth batter. The consistency should be similar to traditional bread batter.

Step 6

Transfer the bread batter to the prepared loaf pan, spreading it out evenly.

Bake the bread in the preheated oven for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

Remove the bread from the oven. Let it cool in the pan for 10 minutes. Then, transfer it to a cooling rack to cool completely.

Lastly, once the Paleo bread has cooled, slice into pieces.

  • 1 cup almond flour
  • ¼ cup coconut flour

Notes

  • Arrowroot flour and tapioca flour are interchangeable.
  • If needed, use melted butter instead of melted coconut oil.  At that point, the bread will not be dairy-free.
  • Feel free to use regular milk if needed.
  • The honey is optional.  It adds a very slight sweetness.
  • Do not make any other substitutions.  This recipe was carefully created to make the most perfect bread!
  • Bake until the bread is golden brown and puffed up in the middle.  Insert a toothpick into the bread.  If it comes out clean, the bread is done baking.
  • Store this bread in an airtight container in the fridge for up to 4 days.
  • Freeze individual slices for up to 2 months.

    I haven't made a lot of bread, but this vegan recipe full of healthy all-purpose flour alternatives caught my interest. So easy to make and very delicious! I like toasting a slice and using it for avocado toast in the mornings to start my day.
