Use boneless pork butt or pork shoulder. This is sometimes called Boston butt. Pork loin and pork tenderloin are both too lean for this roast.

Garlic powder, black pepper, sea salt, onion powder, and oregano add flavor to the meat. Do not skimp on the spices. Be generous with adding seasonings.

Olive oil helps sear the meat. Feel free to use avocado oil.

Finely chop the sweet onion. Use white onion if needed.

Garlic cloves add a classic garlicky flavor! Feel free to use minced garlic if needed.

Use beef broth, chicken broth, or vegetable broth. For the most hearty flavor, I prefer beef broth.

Mini gold potatoes and carrots add flavor! The potatoes become creamy and buttery. If needed, use cubed regular-sized gold potatoes. Chop the carrots into no larger than 1-inch pieces.

Bay leaves add flavor. Feel free to omit if you do not have them.

Tapioca flour helps thicken the sauce. Mix with some of the juices from the pot. It is similar to cornstarch, but corn-free. Replace with arrowroot starch if needed.

How to Make

Step 1

First, season pork butt with garlic powder, pepper, salt, onion powder, and oregano. Season generously all over.

Press Sauté on the Instant Pot. Add the olive oil to the pot. Once the oil is hot, carefully place the pork butt inside. Sear for 4 minutes. Then, flip and sear for another 4 minutes.

Once seared on both sides, carefully place the pork on a plate. Add the onions and the garlic cloves to the pot. Sauté for 1 minute. Then press cancel.

Add the broth to the pot. Then, add back in the pork butt. Add the potatoes, chopped carrots, and bay leaves to pot. Place the lid on top and push the top valve to Sealing.

Pressure cook on high for 60 minutes (or about 20 minutes per pound).

Step 6

When the timer goes off, do not touch the pot. Allow the pressure to naturally release for 15 minutes. Then, carefully push the top valve to Venting. Manually release the remaining pressure.

Remove the pork and veggies from the pot. To make a thicker gravy, remove ¼ cup of juice from the pot. Mix with 1 tablespoon tapioca flour. Return this slurry to the pot and mix until slightly thickened.
