Olive oil adds a rich and flavorful coating to the potatoes while helping them crisp up during roasting.  Use extra-virgin olive oil for the best flavor.  If needed, use avocado oil.

Garlic powder brings a savory and aromatic element.  For a more robust garlic flavor, use freshly minced garlic cloves instead.

  • Do not overlap the potatoes.  Arrange in an even layer on a rimmed pan.
  • Flip after 20 minutes.
  • Store leftovers in the fridge for up to 4 days.
  • Reheat in the oven or air fryer at 350 degrees Fahrenheit.
